Leftover Salad
I'm on my own for a few days, so I have to get creative. Last night I made "six minute eggs" a la Mark Bittman's "101 Simple Meals Ready in 10 Minutes or Less" and had the eggs, asparagus from the farmer's market and some Trader Joe's 5-grain mix for a little carbo addition. I also threw in a couple sun-dried tomatoes (also from the farmer's market) for fun. It was pretty delicious.
I made 2x the amount of grains I needed because (a) it's easier than making a really small amount, and (b) I had an idea for leftovers. A little leftover couscous (it's mainly a couscous mix), on some greens (yes, I nearly bought out the farmer's market...), and a hard boiled egg (cooked a bit longer than the 6-minute variety) made for a fine lunch. I tossed a little oil & vinegar on the greens, too. See for yourself:
