Boiling cauldron
Delicious stew or boiling cauldron in Yellowstone?
This was adapted a little from a NYTCooking recipe by Alison Roman, Spicy White Bean Stew With Broccoli Rabe. Still had some leftover white beans but not a lot so also a added roasted, diced sweet potato, but otherwise followed pretty closely except for the cheese. We had ricotta salata on hand so used that in place of feta. It was honestly the only part of the recipe that was a little weird. That said, I’m not sure feta would have been much better. If I did it again, I’d leave out the cheese altogether. And you know I like cheese!
