Lemon chicken
Made a delicious and very easy sheet pan meal while visiting family in Arizona. It was a test run for a dinner party they were having later in the week. Chicken legs marinated in lemon zest, lemon juice, fresh thyme, salt and pepper for about 4 hours (the recipe said 2-4 or over night). Then baked in the oven and serviced atop lemon orzo we found at the local farmer’s market. Paired with roasted asparagus, it was delightful and satisfying.
