Baked Salmon on a Bed of Arugala

Yep, a fairly simple salad-like meal with some baked salmon filets, roasted golden beets, and a few cherry tomatoes for good measure, tossed with a quick-dressing made of pan-drippings and placed atop a bed of fresh, organic arugula.
