Fava Beans are Good?
"Fava beans are good?" That's what Dave said after we ate our dinner made of mostly fava beans. Fresh fava beans arrived in our vegetable basket and we were not really sure what to do with them. Quick - the internet to the rescue! We found a little recipe for pasta with fava bean sauce. We were a little unsure if these were more like peas than beans, as they appeared, but hey, they're all legumes, right? The beans were shelled and then we cooked for a bit in order to peel them. They were a bright green after peeling. Quite appealing. Heh. ;^)
Most of the cooked and peeled pea-beans were put into the blender with a little stock, white wine, and garlic and whirred to a nice green soup. That was heated and then the remaining whole beans were put in at the end. We ended up with a lot of sauce, so it was more like fave bean soup, than fave bean sauce, but it was tasty nonetheless.
Finely shaved parmesan tops the dish!
