What to do with Left-Over Mole Sauce?

What do we do with the left-over mole? You cannot really make a small amount of mole. I mean, you could, but it would be difficult and annoying. So, you have a party, and invite people, and hope that most of it gets eaten. You will still have some left-over.

Well, we also happened to have some pre-made pizza dough from Trader Joe's that was getting on in its lifespan. So we got a little skirt steak, cooked it lightly, and then made Mexican Pizza: mole sauce, steak, a little Mexican fresh cheese, and fresh cilantro. It was amazingly tasty, in fact!
