How to Spice Up Left Overs


So a big pot of pork and beans means lots of left overs. But what to do with them? Dave separated the beans and liquids from the pork for storing. Then we made a nice Mexican-inspired meal with a thick mole from roasted tomatillas and peppers - in this case Anaheim and passilla peppers. After roasting, they were put in the blender with a little stock and made into a nice sauce.


He also made some cayenne pepper rice, which was not really spicy, but good. And then he crisped some of the leftover pork under the broiler and we ate it all with some good corn tortillas. In other words - left over carnitas of sorts! And nothing like the previous nights dinner.
