brussel sprouts & salmon

While we are the Wood Tavern for a fantastic dinner the other night, we saw something on the menu we just didn't have big enough stomachs to try (you can click here to hear about all the things we did eat!), but which sounded wonderful: brussel sprouts with burnt almond butter and parmesan. We had to try this ourselves.

We roasted the brussel sprouts along with potatoes in the cast iron pan.

Then we put 2 salmon fillets on top and stuck it in the hot oven (425). After 5 mins, we lowered the oven to 350 and let it cook another 10 minutes or so. And voila:

The almond butter we made on the stovetop, cooking slivered almonds in butter until brown. Then we poured this browned mixture over the parmesan and Hawaiian sea salt we had sprinkled onto the sprouts. Quite delicious.
