shrimp & chard pasta
A meal in 10 minutes. Okay, maybe 20 minutes, but very quick and ideal for a week night.
Whole wheat pasta topped with sauted shrimp, green chard, a little onion, garlic, and chili peppers. I thought it couldn't be done: chard without bacon, but in fact, it can be and it still quite tasty. Ze chef said we had double-bacon the other night, which is true - bacon on the steak and bacon on the collard greens, but I said it was a holiday, so didn't count. For the record, the "usual" serving of bacon is 2 slices - one slice each. More of a flavor-enhancer than an actual meat serving size.
We also had some crostini and kalamata tapenade for accompaniment.
