mushroom risotto

Oh, nothing like cold rainy weather to make the risotto cravings come alive. On taking stock (heh) of what we had on hand, I noticed mushrooms and parmesan cheese, and since a new batch of stock is now taking over the freezer, this was the obvious choice. Stick to your ribs good. Oh, and off to the side, kind of out of focus, you can see the wonderful parmesan-encrusted crostini Dave made for accompaniment. Yumm!
