real men do eat quiche

This was simple (if you have frozen pie crust - there are organic varieties!) and really tasty. And oh-so rich. Bacon, leek, spinach, crimini, and a touch of gruyere. See "recipe" below. Of course, we are very lucky to get all our vegetables from Planet Organics! That and we try to get other organic or locally produced items when possible.

Here's how to make this:
Fry some bacon, remove and sit on papertowl. Then fry the leek (sliced & cleaned) in the bacon fat. You need to use good bacon for this. And you don't need much. The recipes I looked up called for a pound or half a pound, but I used 6 slices and I'd say it was almost too much; 4 would do. Remove leeks when softened and saute sliced mushrooms briefly. I had to add a little olive oil. I put the leeks & the mushrooms into a bowl. Then added a little spinach, chopped, and mixed so the spinach wilted. Then, spread the mixture in the pie crust. Sprinkle bacon on top. Grate a little cheese on that. Lastly, beat 4 eggs, 1/2 to 3/4 cup cream (or milk - we want to try stock as a variation), a little salt & pepper in a bowl, and pour on top. Bake at 375 for 35 minutes.
