Pumpkin Soup
Pumpkin soup with vanilla. Yes, it was obvious what to do with leftover pumpkin flesh: make soup! This was quite simple and very rich and delicious. We pureed the the pumpkin with chicken stock, heated it up, added a touch of half-and-half, some cumin, pepper, and for the finishing touches - some vanilla-infused olive oil [simple to make by putting a vanilla bean into olive oil and letting it sit for while]. We topped it with a little toasted sage and some crostini. A very nice fall dinner.
