Eggplant stuffed with seafood (shrimp, scallops and calamari) and rice, with a little parmesan and parsley, beside an arugula and del Cabo tomato salad.

Finally a healthy meal that satisfies on a cold winter night. Although, perhaps a little time-consuming for a Monday night:Bake the eggplant; cook the rice; combine with seafood and spices and put back into eggplant shell to bake more. Top with parmesan cheese. Toss salad with balsamic and oil, salt & pepper.
