golden beets with lemon? are we mad?
We made beets not that long ago (see here), but the beets keep coming from our veggie delivery and we love them, so here is a slight variation on the last meal. Last time we roasted the beets and sauted the greens with a little onion and bacon and tossed on top of pasta, then drizzled with a little vanilla oil. Wonderful.
This time, we also had Meyer Lemons (yumm), and thought we'd give it a try with the golden beets. I think I may like golden beets even better than their deep red brethren. They seem sweeter and maybe a little milder. So I was worried about the lemon being too strong or acidic. But being wonderful organic Meyer Lemons, they are neither. We roasted the beets with a little shallot, bacon*, and then added the greens and lemon juice and lemon zest and steamed until the green turn bright green. We put that atop a little whole wheat* couscous and drizzled some champagne vinegar on top. Yummy, yummy, really yummy.
*For those of you who think we eat too much bacon, I reiterate that we typically use only 2 slices per meal, i.e., mostly a flavoring. I would also like my avid readers to know that my cholesterol level was excellent in recent testing. But still, we are trying to eat healthier, so why not a little whole wheat when we can? Holly, I heard on "Oprah" that Jerusalem artichoke pasta (I think that is right) has tons of fiber, is very healthy, and tastes about like the regular kind. I haven't yet investigated where to buy this or tried it, but... there you go.
ReplyDeleteWe've been eating Quinoa Pasta (I had a hard time finding it in stores and so I ordered a bunch of boxes on line) and it is actually quite good. Much healthier than traditional white pasta and a little lighter than whole wheat pasta. We use whole wheat pasta for our Spaghetti and just get the something or another "Plus" brand (I think it is Barilla Plus) and it works for us just fine.
