lamb curry

This is a wonderful recipe from a wonderful cookbook from a wonderful restaurant, Ajanta. It is called lamb in red pepper sauce and it is pretty much just that. Oh, and it's tasty, too.


There is a little bit of prep work that mainly requires grinding spices. Also, pureeing a lot of red bell pepper, which was kind of fun.


Then you brown the meat, add the pureed peppers, add the spices, and let simmer.
After the lamb is nice and tender, a little garam masala (more spices), some tamarind liquid, and a touch of cream is added. Then, voila - a fine meal:
