ossobuco
Well, it looked lovely, but I think we didn't let it stew long enough and the meat was not as tender as it could be. We have made ossobuco twice in the past - both times with buffalo meat - and the first time it was incredible and wonderful, the second time rubbery. This time was in between, so we clearly have some tweaking to do with our recipe. Does anyone have any hints for us? Thanks!
