oven-roasted salmon and vegetables
Salmon filet and root vegetables roasted in the oven. We made sort of a combination of these two recipes from Epicurious:

We roasted the vegetables (parsnips, carrots, potatoes, brussel sprouts, mushrooms, onion - all organic) on the stove top and then put the salmon on top and put it in the oven. Then we topped the salmon with the sauce from the second recipe - red onion, lemon zest, lemon juice, capers, thyme and olive oil. Very good!
The trick to roasting potatoes or other root-type vegetables is 2 things: first, using a cast iron pan, and second, starting on the stove top. Saute on a fairly hot flame until browned, but not softened. Then stick in the oven to finish up.
