roasted beets on pasta
This is one of our favorites. Oven-roasted beets (made in the same way we make roasted potatoes - described here) with onion, garlic, and 2 slices of bacon for flavor, served atop pasta drizzled with olive oil. The beets are really good this way: tender and sweet. To think I never use to eat them - although that was back when I could only find pickled or canned beets. Nasty stuff. Fresh beets, like everything else, makes all the difference. Also, quite good for you.
We served this with a vitamin-C salad: mixed greens and satsuma oranges. Hopefully that will get my chef feeling better again.
