this was suppose to be risotto
...but we were out of Arborio rice.
So we promised to post our successes & failures and this may fall into the latter category.
I had already chopped up the butternut squash and onion when we found out there was no arborio. Sigh. So I basically made risotto without the rice - sauted onion & squash until softened and nice and put it atop some pasta instead. To make this actually tasty, Dave made some brown-butter sage sauce with Hawaiian sea salt and parmesan and put that on top. So, all in all, it was edible, but not very pretty and not quite what was intended.
We had a delicious little salad alongside, too: 2 kinds of lettuce, cherry tomatoes, cucumbers, and a bit of crumbled blue cheese. Yummy.
